Mexico Nayarit Anaerobic Coffee Tasting Notes
We get deep fruit notes, like berry. There is a smooth balance to this coffee that suggests a bit of cocoa/chocolate undertones. It’s fairly smooth.
This coffee is first naturally processed (the coffee cherries are naturally dried and allowed to remain on the bean for longer than with a washed coffee.) From there, the coffee cherries are placed in pressurized sealed tanks and deprived of oxygen. This anaerobic process leads to distinct acids which lead lead to an incredible drinking experience and distinct flavor profile for the coffee.
