About the Producer
This dark roast comes from high altitude Guatemalan small-lot producers 4900-6000 feet above sea level. We roast it medium-dark trying to pull as much body as we can out of the bean. At the same, we don’t want to over-develop the beans and kill the fruitiness. We think you’ll be impressed what we can muster out of these Bourbon, Caturra and Catuai beans.
Huehuetenango is the driest of all the regions in Guatemala that aren’t volcanic. Winds sweep down from the Mexican Tehuantepec Plain and wipe a lot of the moisture away. Those winds also help keep heat in the area, protecting the coffee crop from frost that might otherwise make coffee grown at mile-high altitudes untenable.
Due to the high altitude, nearly all of Huehuetenango’s producers process their own coffee. Fortunately, the region has rivers and streams in abundance, so processors can place mills for washed processing almost anywhere.
